Happy Mother's Day Dukan Style

Just tickled pink to have spent your very first mother's day with you and the family. Seeing the three of you together makes my heart want to burst!!! I am so happy for you honey.
It's a wild ride...

so hold on tight and cherish every single second! Laugh with Sadie as often as you can...it's the best sound you will ever hear! Shower her with hugs & kisses and take advantage of every opportunity to let her sleep on your chest peacfully like a little cherub. There will come a sad day when she can't. They grow so quickly...  I know this is like total cliche but 

It goes so fast...it's like you blink your eyes and poof!

I digress, as usual...

OUR FIRST SPECIAL EVENT DUKAN STYLE

Success! 

What a great brunch momma:) We are getting good at this.  So let's record what we did and put them in the bank for other events.  I think my favorite new recipe was the

onion fritatta:

eggs
shallots
garlic
white onion
green onion
dry vermouth
garlic powder
Salt & Pepper

-pre-heat oven 350 degrees
-chop shallots & green and white onions keep  green onions separate
-heat frying pan-coat with cooking spray and tsp of veg. oil
-sautee shallots & white onions med. heat about 3-5 minutes
-add dry vermouth and sauté for another 4-6 mins.
-in large bowl beat the eggs, green onions, garlic powder, salt & pepper to taste
-add shallots & onion to egg mix and beat together until mixed
-pour into deep dish and bake for 30 minutes
-let cool for 10 minutes

*I made one this week cut it and stored it in the fridge for a easy grab and go

Let's see we also enjoyed:

-gallettes w/ fat free cream cheese, red onion & lox
-pickled beets from the amish market (might have sugar but didn't eat too many:)
-chocolate mouse (SF FF chocolate pudding mixed w/ fat free cool whip)
-Skinny Vanilla Latte (has been a life saver thanks for the tip)

YUM!

We managed to stay away from the french toast soufflé, beautiful fruit spread, bacon and Uncle Dave's famous chocolate chip cookies....

ok confession time....

I ate one of the left over cookies yesterday:( I am PMS. It wasn't me it was my hormones:) Seriously though it was ONE cookie and I'm back on track.  I think we've both learned over the years badgering ourselves does nothing good.  We need to remain positive and move forward.

I said to Jay last night that I plan to have a few drinks at the beach next week. I am more likely to fall off if I don't give myself a couple of passes that week.  Wish you were coming! Next year!

All in All a wonderful mother's day brunch with my favorite peeps.
