Personal Transformation + Pad Thai Obsession

I am so glad we started this Dukan Diet journey together. I realized that we have almost gone two months and am so proud of us. Will power could be our new thing. I knew I still had that in there somewhere along with thinner me. Today was a protein only day. It's odd how I don't think about food and crave it in the same way. Having stricter guidelines has somehow allowed me to forget about it a little more. Forget about it until I smell a baked potato or see a plate of pasta. Pasta. Pasta. Shirataki Noodles? It looks like the real thing. I really want it to be the real thing and have found it really feels like you are being naughty and eating a vat of chow mein or pad thai when it's prepared with Asian spices. I am still on the journey to find the perfect pad thai recipe but am getting closer and Dukanizing by replacing palm sugar with Splenda brown sugar. Not sure what will get close to the crunchy peanuts. Where else can we get that crunch? I am somewhat obsessed with figuring this out and will keep you posted. Next up green papaya salad sans fruit. xxoo

Drink your WATER!

I was doing so great with my water intake and then for some reason I fell off track. Same with my walking! So I am making the extra effort as we discussed to work on both of those things.

I wanted to share a yummy way to drink your water...change things up a bit.

I have been keeping a pitcher of water with sliced cucumber & lemon in the fridge.  The whole family has been really enjoying it.  I am going to add some basil this week to see how it turns out.

We need to try the cucumber drink you loved when you were prego....what was that again?

Happy Mother's Day Dukan Style

Just tickled pink to have spent your very first mother's day with you and the family. Seeing the three of you together makes my heart want to burst!!! I am so happy for you honey.
It's a wild ride...

so hold on tight and cherish every single second! Laugh with Sadie as often as you can...it's the best sound you will ever hear! Shower her with hugs & kisses and take advantage of every opportunity to let her sleep on your chest peacfully like a little cherub. There will come a sad day when she can't. They grow so quickly...  I know this is like total cliche but 

It goes so fast...it's like you blink your eyes and poof!

I digress, as usual...

OUR FIRST SPECIAL EVENT DUKAN STYLE

Success! 

What a great brunch momma:) We are getting good at this.  So let's record what we did and put them in the bank for other events.  I think my favorite new recipe was the

onion fritatta:

eggs
shallots
garlic
white onion
green onion
dry vermouth
garlic powder
Salt & Pepper

-pre-heat oven 350 degrees
-chop shallots & green and white onions keep  green onions separate
-heat frying pan-coat with cooking spray and tsp of veg. oil
-sautee shallots & white onions med. heat about 3-5 minutes
-add dry vermouth and sauté for another 4-6 mins.
-in large bowl beat the eggs, green onions, garlic powder, salt & pepper to taste
-add shallots & onion to egg mix and beat together until mixed
-pour into deep dish and bake for 30 minutes
-let cool for 10 minutes

*I made one this week cut it and stored it in the fridge for a easy grab and go

Let's see we also enjoyed:

-gallettes w/ fat free cream cheese, red onion & lox
-pickled beets from the amish market (might have sugar but didn't eat too many:)
-chocolate mouse (SF FF chocolate pudding mixed w/ fat free cool whip)
-Skinny Vanilla Latte (has been a life saver thanks for the tip)

YUM!

We managed to stay away from the french toast soufflé, beautiful fruit spread, bacon and Uncle Dave's famous chocolate chip cookies....

ok confession time....

I ate one of the left over cookies yesterday:( I am PMS. It wasn't me it was my hormones:) Seriously though it was ONE cookie and I'm back on track.  I think we've both learned over the years badgering ourselves does nothing good.  We need to remain positive and move forward.

I said to Jay last night that I plan to have a few drinks at the beach next week. I am more likely to fall off if I don't give myself a couple of passes that week.  Wish you were coming! Next year!

All in All a wonderful mother's day brunch with my favorite peeps.

Have Dukan will Travel

We were in North Carolina celebrating Pop's 89th Birthday!!!!!! Amazing.  Truly amazing. Just a few years ago we thought the outcome was going to be quite grim. But Roscoe has such an incredible spirit.    He's a fighter, I mean he was a POW for crying out loud. We are so blessed to have him in our lives. Watching Pop & Grammy smile and hearing the kids joking and giggling with their GREAT GRANDPARENTS...priceless!


So this has been my first trip since we started following the good Dr. Pierre Dukan. To describe it in one word:

!Tough!

but i totally rocked it;)-

For starters I had to prep and pack all the things I'd need for a 5 day excursion. We'd be in Chapel Hill for about 2 days and then to the farm for 3. There would be lots of BBQ, birthday cake and all kinds of things that are so not friendly to this plan. As I'm sure you've noticed ya gotta use A LOT of stuff and ya COOK yo' freakin arse off!

So I packed a large cooler with:

turkey burgers, asian chicken & veggie stir fry, salad, Galettes, Lox, boiled eggs, SF/FF vanilla pudding, Dukan cheese cake, oat bran, cinnamon, ginger, onion, almond extract and truvia.

Granny hooked me up with skim milk, deli meats, carrots, peppers, yogurt, sour cream...

Bottom line I was a girl scout! I came prepared and I had success!

I cut cake and served ice cream...didn't lick a finger. It wasn't as hard as I thought but I bet in a few months it will be real hard.

I watched everyone eat Parker's BBQ I ate a salad with a turkey burger and low sugar ketchup and yes I made my own dressing.  It was a PP (pure protein) day but I did have salad at lunch.

OOOOOOO breakin' the rules....I am so bad:)  Lol I figure if I'm "cheating" with salad I'm in a much better place then where I was a few weeks ago!
